Quinoa Pizza Bites

1-1/2 cups prepared quinoa (from 3/4 cup dry)
1 egg
1/2 cup pepperoni, diced
2 tablespoons grated Parmesan cheese
1/2 cup pizza or jar sauce, plus more for dipping
3/4 cup shredded mozzarella cheese
1 teaspoon Italian Seasoning

Preheat oven to 350.
Prepare quinoa according to package directions.
Combine cooked quinoa with all other ingredients and mix well.
Spoon into mini muffin pan coated with cooking spray. Bake for 20 minutes, let stand in pan 5 minutes before serving.
Serve with additional sauce for dipping.

Makes 18 mini muffins.
